Okay you retro fans, here is an old school 60's-style potluck favorite for you to add to your own repetoire. This salad is surprisingly refreshing and filling, and is pleasing to most palates except maybe a foodie (snob). I mean it's got bacon, cheese and mayo...how can it be bad eh? So put this salad together, make your self an Old-Fashioned and settle in for a night with all those Mad Men!
"Betty Draper's" Layered Salad
1 head iceberg lettuce, roughly chopped
1 bunch green onions, chopped
1 8oz can water chestnuts, drained and chopped
1 8oz pkf frozen green peas (no need to defrost)
1 lb bacon, fried and crumbled
2 c mayonnaise
1/2 c grated parmesean cheese
1 tsp sugar
1 tsp garlic powder
Salt and pepper to taste
Directions:
Layer ingredients in a large bowl as follows: lettuce, green onion, water chestnuts, and frozen peas; set aside. In a small bowl mix together remaining ingredients, except bacon, until well blended. Spread mayo dressing mixture on top of the salad then sprinkle bacon on top. Cover with plastic wrap and refrigerate overnight, or at least 8 hours, before serving.
