Coconut Milk Cake

OMG...this cake will change your life (and it doesn't have any chocolate in it either!). It is so moist and delicious, and once you try it you will be in l-o-v-e is all I can say. CMC does not need any frosting or glaze, nothing except maybe a dusting of powdered sugar and that's really just a presentation "thing".  Enjoy!


Coconut Milk Cake

1 box yellow cake mix
1 pkg (small) instant vanilla pudding
1/2 c vegetable oil
1/2 tsp vanilla
4 large eggs, beaten
1 12oz can coconut milk
Optional: powdered sugar for dusting

Directions:

Preheat oven to 350 degrees. Grease a 13x9 baking dish and set aside.

Combine first five ingredients in a bowl and mix thoroughly. Shake up coconut milk in the can, then open and pour into bowl. Mix in coconut milk until well-blended. Place cake mixture in prepared pan and bake for 35-40 minutes, or until toothpick inserted comes out clean. Remove cake from oven and cool in pan on a rack for 7 minutes then turn out onto serving plate. Dust with powdered sugar when completely cooled.
